Connor DeMarco

Standard Fare and Bocage Executive Chef Connor DeMarco is a Saratoga Springs native whose culinary career began in some of the city’s former staples, including Lillian’s, Merry Monk, Fish at 30 Lake, and the short-lived Rascals Steakhouse at Crossgates Mall. He later moved to southwest Florida, where he joined the team at Crave Culinaire and worked at Society—a multifaceted dining and nightlife concept combining a restaurant, rooftop lounge, and nightclub with late-night dining. He then developed and led a full-service dining program at the Spa at Shangri-La in Bonita Springs, which ultimately shuttered during the pandemic.
Connor returned to the Capital Region in October 2020 to serve as Executive Chef at The Merc and consulted for the newly reimagined 30 Lake. In spring 2023, he joined Prime at Saratoga National, followed by a move to Cantina and 408 Event and Occasion, where he primarily focused on culinary development.
